Jerk Sauce
2 med onions chopped
2 tbls olive oil
soften these onions up
Combine:
3 tbs ground allspice
3 tbs ground thyme
4 tbs cayanne
2 tbs ground black pepper
4 tbs ground sage
2 tbs nutmeg
2 tbs ground cinnamon
4 tbs seasoned salt
4 tbs chopped garlic from a jar or fresh
(approx 1 garlic head)
4 tbs sugar
3/4 cup soy sauce
1 1/2 cup vinegar
1 1/2 cup water
1/2 cup water with 2 tbs flour
combine all ingredients together and simmer until sort of thick.... aprox 5-10 minutes
This makes 1 hell of a condiment for pork, chicken, fish, goat or whatever.
Makes about 6-7 cups
